First House Guests & Crawfish Boil


This weekend we had the Hubby's best friend and wife over for the weekend to see the new house. Which means that last weekend, we were trying to quickly clean out the guest room so we could put the bed in there. It all worked  out, because they had a clutter free room {with a bed} to stay in.

Hubby decided that he wanted to do a crawfish boil while they were visiting. So Saturday morning the boys went out and picked up a sack of live crawfish to boil later that evening. Here are a few pictures I took of the day {with my phone}.


 Now doesn't that spread look yummy?? Luckily  one of our neighbors came by to help us eat some of it. There was so much food!!!

On Sunday after our friends left to go back to Mississippi, we sort of had a lazy afternoon of watching TV. We ended up watching a show on the Cooking Channel about wood oven pizzas, which all looked super yummy. So I'm not really sure how we got the idea to make our own pizza for dinner, but you know.  :)


Hubby found a recipe for pizza dough online. I know I'm a horrible blogger for not remembering where / who he got the recipe from. We put some tomato puree {from a can} along with some dried herbs mixed in as our pizza sauce.

Then we added the leftover crawfish, mushrooms, garlic, and sausage from the crawfish boil on our pizza. Baked at 450 degrees for about 18 minutes, and voila Crawfish Boil Pizza!!!! Let me just say that this crazy idea was delicious!!

Making Cookies


I am so excited that the oven gods heard my prayers and allowed me to bake cookies last night. They came out perfect!! And here's how the final product looked.

These are called Spumoni Chunk Cookies. I got the recipe from my good friend Betty Crocker. Ok so maybe I don't really know Betty, but the girl has some killer cookie recipes.

Spumoni Chunk Cookies:
1 pouch of Betty Crocker Sugar Cookie Mix
1/2 cup butter, softened
1 egg
1 cup dried cherries, coarsely chopped
1 cup semisweet chocolate chunks
1 cup salted dry-roasted pistachio nuts, coarsely chopped 

Preheat oven to 375°F. 
In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in cherries, chocolate chunks and nuts. {I personally like to wait until the batter cools before I put the choc. chunks in. It keeps them from starting to melt in the dough and turning your dough brown.}

On ungreased cookie sheets, drop dough by heaping tablespoonfuls about 2 inches apart.

Bake 10 to 12 minutes, and enjoy after they have cooled off some.

Dinner: Oven Fried Fish

Last Night I tried out Zatarain's Bake & Crisp on some frozen Tilapia fillets. I was afraid that either the coating wouldn't stick or it would turn out soggy, but to my surprise they came out perfect. And as an added bonus, this was SUPER easy to make.

Here's how to make them:
Preheat oven to 425. I seasoned my lightly scrambled eggs with some Tony Chachere's, but salt and pepper will do. I coated the fillets one at a time, mostly because I couldn't find a container big enough for multiple fillets. Pour some of the Bake & Coat onto a plate, and press the fillets into the mix. Make sure that you cover every aspect of the fillets with the coating. Then place the coated fillets on a greased pan.

 Bake for 30 minutes, flipping halfway through. And Voila a yummy fish dinner that Mike completely LOVED. He said he preferred this to regular old fried fish because it wasn't greasy and the fish was just crispy enough. I completely recommend everyone to try it, they even have Bake & Crisp for chicken and pork. I just might have to try those out too!
