New Furniture and Hurricane Isaac

So this week was super crazy! Mike and I hurried to move our new TV stand into our apartment Monday night. He wanted it in before Tuesday because some of our friends living in Mississippi were coming in for the Journey concert, and he wanted to show it off. Well Hurricane Isaac changed all of our plans, the concert was moved to October, our friends stayed in Mississippi, and we prepared for the weather that was coming our way.

The Top

Our TV stand is a variation of a media stand by Ana White. It took us about two weekends and a few weekday evenings to finish it. We decided not to add the top shelve doors on it for the time being. The only thing left to do is to add the glass to the bottom doors.

And how did we manage with Hurricane Isaac? Drinks and snack food kept us from going stir crazy from cabin fever.

Dinner: Oven Fried Fish

Last Night I tried out Zatarain's Bake & Crisp on some frozen Tilapia fillets. I was afraid that either the coating wouldn't stick or it would turn out soggy, but to my surprise they came out perfect. And as an added bonus, this was SUPER easy to make.

Here's how to make them:
Preheat oven to 425. I seasoned my lightly scrambled eggs with some Tony Chachere's, but salt and pepper will do. I coated the fillets one at a time, mostly because I couldn't find a container big enough for multiple fillets. Pour some of the Bake & Coat onto a plate, and press the fillets into the mix. Make sure that you cover every aspect of the fillets with the coating. Then place the coated fillets on a greased pan.

 Bake for 30 minutes, flipping halfway through. And Voila a yummy fish dinner that Mike completely LOVED. He said he preferred this to regular old fried fish because it wasn't greasy and the fish was just crispy enough. I completely recommend everyone to try it, they even have Bake & Crisp for chicken and pork. I just might have to try those out too!

First of Many Posts, I hope

Ok, so I'm adjusting to how much my life has changed in just a few months. I went from being a Grad student, planning my our wedding, and working full-time to just working and doing nothing. So now I've got a lot of time on my hands and I plan on using it to full advantage on some crazy project or craft idea, cooking up something yummy for my hubby, and whatever else I can come up with to keep me from going stir-crazy.
